This salad is excellent with grilled meat!

Cook the broccoli gently so it retains its vibrant green colour. Add salt and pepper. Cook the whole or halved mushrooms in boiling salted water for 3-4 minutes and drain.
Dry roast the almonds in a pan. Arrange the mushrooms on the broccoli, drizzle with olive oil and sprinkle with toasted almonds to serve.
