Days are getting hotter, so we don't really want to eat heavy diches. This light veggie and vega meal is an excellent choice on a summer day!

Dice the mushrooms, salt, pepper and steam.
Cook the rice and mix in the mushrooms.
Slice the courgette lengthways and remove the middle. Fill with the mushroom rice. Sprinkle with grated cheese and bake until golden brown.
