What are we talking about?

White button mushroom represents the largest proportion of the cultivated mushroom species. The world’s mushroom growing volume is 8 million tonnes of which 75-80% is button mushroom and 15% is oyster mushroom.

The population of button mushroom (Agaricus) includes at least 300 species, most of them are edible. Now we focus on cultivated white and brown mushroom. The cap of white button mushroom (Agaricus bisporua) is white, with its pleasantly mild taste this is the world’s most popular and most readily available type.

The cap diameter varies, in case of fresh market it is 5-7 cm in general, below this size we talk about baby button mushroom, above this size we talk about grill button mushroom. The cap of first-class white mushroom is closed! Cap and stem can be consumed, there is no kitchen waste during the preparation of the button mushroom.

Where does it come?

It is known that the first written records were found in France from XIV Louis. It was written in the 17th century and button mushroom is firstly mentioned in a very significant French agricultural publication (Olivier de Serres Théâtre d’Agriculture).

A relative of white button mushroom is the brown one also known as chestnut mushroom or creamy mushroom or French creamy mushroom, Roman mushroom, portobello, baby bella.

Not only the color of the hat is different but the growing technology as well because the growing of brown mushroom is longer. Because of this it has more intense flavor, more characteristic, slightly creamier.

It is snow white, intact, round, with completely closed cap, the inside of the stem is not wet or browned, there is no discoloration, indentation, spots, it is free from mechanical damage and free from foreign smell and taste.

How do we store?

63fe932be7f3a2ab2995a3f52a4b4877In the fridge, in the vegetable part we can store for 1-2 days but the best is to use it inmediately after buying. If we have to store in case of bulk put the mushrooms in a paper bag, in case of plastic punnet, leave it in that under the foil.

Button mushroom is cultivated under controlled conditions on heat-treated compost. So it is enough to clean with a soft brush or cloth wipe or rinsing well under running water. Do not soak and do not peel not to loose nutrients found in the mushroom.
