Remove the stem of the mushroom and cook both sides of the caps in slightly salty water for 3-4 minutes.
Make a marinade of the olive oil, garlic, salt and pepper. Drain the mushrooms and leave to stand in the marinade. Before serving remove the mushroom caps from the marinade and fill with cubed feta cheese.
Sprinkle with chives and sun-dried tomato. Delicious with capers.
