Slice the chicken breast into 1 cm thick slices, pound with a meat tenderiser if necessary. Slice the mushrooms into 1 cm slices. Fry both quickly in hot oil. Place the meat in an ovenproof dish, arrange the mushrooms on top and lay a slice of cheese and tomato on each.
Bake in a preheated oven at 200 °C until the cheese melts.
Serve with salad and potatoes or rice.
