It is best to prepare the avocado cream the day it will be served as it will brown over time.

Use a hand blender to cream the avocado, the coriander, the chili (optional for those who don’t like spicy food), the peeled, de-seeded and diced tomato, the diced onion and lemon juice.
Prepare the mushrooms: remove the stem of the mushroom and cook both sides of the caps in slightly salty water for 3-4 minutes. Fill the mushroom caps with the cream.
Arrange on the chicory leaves and decorate with tomatoes and olives.
