It is worth trying chicory, you are not going to be disappointed of the flavors!

Cut the mushrooms into slices 1-1.5 cm thick and add salt and pepper. Fry both sides with a little oil in a frying pan.
Use the same pan to fry the prawns and finely chopped garlic.
Dry fry the pine nuts, stirring constantly. When they are ready, remove from the pan as they can burn in the heat of the pan.
Cut the chicory and arrange the mushrooms and garlic prawns. Sprinkle with chopped coriander and toasted pine nuts.
Before serving, drizzle with olive oil and balsamic vinegar.
