There is nothing better in summer than a light salad mostly if it has only three ingredients!
Cut the mushrooms into quarters, steam and drain.
Peel the pineapple, remove the core and chop. Mix the olive oil, lemon juice, and finely-chopped coriander and crushed garlic. Add salt and pepper to taste.
Mix the mushrooms, the cooked prawns and the pineapple in a dish. Pour over the dressing and mix well.
