Rub the pork fillets with salt, pepper and mustard, then sprinkle with marjoram. Start to cook the meat in a little oil with some water in a large non-stick pan with a lid. Add the finely diced onions. Turn frequently but make sure the meat browns. Remember to replace the water that evaporates. This requires constant attention but is worth it to bring out the best flavours in the meat.
After half an hour add the sliced mushrooms. All sizes of mushrooms are good, indeed various sizes can also work well. Cook together for another 8-10 minutes. Sprinkle with fresh parsley when ready.
Leave the skins on the new potatoes. Wash well and halve. Sprinkle with salt and caraway seeds and bake for about 40 minutes at 200 °C. It is very tasty with fresh salad as well!
