Healthy and easy dinner for everybody!

Cut the spring onions into 1-2 cm pieces. Slice the mushrooms and fry in a pan for 3-4 minutes, then add the onion and cook for another 2-3 minutes before taking off the heat.
Salt and pepper the fish fillets and brush with olive oil. Place in an ovenproof dish and arrange lemon slices on top.
Cook for 20 minutes in a preheated oven.
Serve the fish on a bed of mushrooms with rice.
