Spring cabbage bake with button mushrooms

In this murky autumn time this dish which warms up your body and soul is excellent mostly that button mushroom is available during the whole year and this is the season of cole!

Wash the cole leaves and blanch in boiling salted water. Drain and put aside.

Make the mushroom sauce. Sauté the diced onion in a little oil, add the sliced mushrooms and season with salt and sweet paprika. In summer diced tomatoes and peppers are a great addition as they give a lovely flavour. Stir in the sour cream and the sauce is ready in about 10 minutes.

It is worth draining off some of the excess liquid as too much sauce will give a less pleasant texture. Layer the cole leaves and mushroom sauce in an ovenproof dish. The top layer should be cole. Spread over the sour cream and top with the bacon. Bake until the bacon is golden brown and crispy. For a vegetarian version cover with grated cheese instead of bacon.
