Tomato couscous with mushrooms and prawns

Slice the mushrooms thinly and cook.

Peel the tomatoes, dice and remove the seeds. Toss in hot oil and salt and pepper.

Add the steamed mushrooms and crushed garlic. Sprinkle the couscous over the mixture and add water. Add more salt if necessary. Stir constantly until cooked. Couscous absorbs water quickly and does not really need cooking, but absorbs the flavours better when stirred on a low heat.

Throw in the prawns and serve as shown in the picture. Make small towers or use a form that makes the dish even more attractive.
